The classic fermentation was used to make these wines with a minimum of 20 days fermentation on the skins. All five of the noble grape varieties we used in this blend were matured in oak barrels for no less than 12 months. Our winemaker selected only the best barrels to make Noble V. Each variety has its own unique characteristic which gives this wine it’s complexity and nobility. This blend took over five months to complete before our winemaker was satisfied with it.
In a blend an oenologist unites the strengths and weaknesses of a variety inversely proportional to the strengths and weaknesses of another variety, but not to cover defects but to improve existing skills and especially to create a unique wine. Noble 5 is an intense ruby red wine with an rare aromatic complexity and taste. Blackcurrant, cherry and cherry jam flavors are going hand in hand with woody notes from oak barrel. The taste is spectacular, when you think you understand a new flavor appears. Feel of the papillae immediately tells you it’s a slippery wine: fullness, vivacity, corpulent but soft tannins.
Dishes based on duck, beef and lamb accompanied by fruit sauces.
