Shiraz is a variety originar from France that has been exploited and promoted into the New World of the wine. Shiraz is well suited to the soils and climate of the Dealu Mare. The grapes are picked when they have reached their maximum maturity resulting a production of maximum 7 tones/hectar. Before fermentation the grapes are given 3 days cold soak on the skins at 10°C which gives this wine its fruity and spicy characteristics. Fermentation is carried out for 20 days at a maximum temperature of 28°C.
This Shiraz has a beautiful dark purple colour with blackberry and black currant aromas and notes of spice. A mixture of fruit and black pepper on the palate, soft and well balanced wine with a long fruity aftertaste. 30% of this wine is aged in American oak barrels for six months before it is blended back with the rest of the wine.
Recommended with spicy dishes, stakes, sausages, grills and seasoned cheese. Serving temperature: 18-20˚C
