    Vinification particularities Busuioaca de Bohotin is a very picky grape variety that is grown and vinified with difficulty. In Budureasca vineyards it was planted on an area that offers an important number of hours in the sun to be protected from diseases that occur due to moisture . The year 2014 was generous and we get a wine with strong, well-defined flavors. Tasting Notes Elegant pink color with high aromatic intensity which prevails a mix of rose petals, cherries and strawberries. The taste evolves quickly and captures a juicy fruitiness creating a unique personality of this wine. Acidity maintain a balance in the structure so as not to dominate the sweet taste.     Vinification particularities The year 2013 offered good Muscat Ottonel grapes that accummulated large amounts of sugars. Our winemaker designed a complex technological route to get a sweet wine with a vast aromatic palette. Before transferring grapes in stainless steel tanks, and before fermentation begins, pellicular maceration was applied in the press at 10°C. Fermentation process also took place at low temperatures (12-15°C) for a better conservation of primary flavours. Tasting notes Brilliant straw yellow color, with spring flowers flavours. Sweet, ripe peach and pear, with a good acidity. Solid structure of this wine gives a long aftertaste. Food pairing We recommend pairing with desserts based on fruits, cheese or chocolate. Serving temperature: 10-12˚C.

    Vinification particularities

    Grape harvest begins in late September - early October when they have large accumulation of sugars (approx. 260 g/l). Our winemaker selected a vineyard over 60 years old that provide grapes of the highest quality as to obtain this wine with unique personality. Fermentation takes place at low temperatures (10-14˚C) to preserve fresh and intense flavors of the achieved wine.

    Tasting notes

    Straw yellow color, strong aromas of jasmine, elderflower and pear. With a good balance of fruit and floral aromas, good acidity and a pleasant, slightly sweetness, impresses both amateurs and professionals with its complexity. It is evolving with intense floral aromas in the aftertaste.

    Vinification The classic fermentation was used to make these wines with a minimum of 20 days fermentation on the skins. All five of the noble grape varieties we used in this blend were matured in oak barrels for no less than 12 months. Our winemaker selected only the best barrels to make Noble V. Each variety has its own unique characteristic which gives this wine it’s complexity and nobility. This blend took over five months to complete before our winemaker was satisfied with it. Tasting notes In a blend an oenologist unites the strengths and weaknesses of a variety inversely proportional to the strengths and weaknesses of another variety, but not to cover defects but to improve existing skills and especially to create a unique wine. Noble 5 is an intense ruby red wine with an rare aromatic complexity and taste. Blackcurrant, cherry and cherry jam flavors are going hand in hand with woody notes from oak barrel. The taste is spectacular, when you think you understand a new flavor appears. Feel of the papillae immediately tells you it's a slippery wine: fullness, vivacity, corpulent but soft tannins. Food pairing Dishes based on duck, beef and lamb accompanied by fruit sauces. Serving temperature: 18 - 20˚C.

    Vinification In order to reach the maximum potential of aromas, the skin contact is longer for this wine. Afterwards the grapes are pressed slowly, carefully, so to preserve all aromas and flavours.     Vinification Shiraz is a variety originar from France that has been exploited and promoted into the New World of the wine. Shiraz is well suited to the soils and climate of the Dealu Mare. The grapes are picked when they have reached their maximum maturity resulting a production of maximum 7 tones/hectar. Before fermentation the grapes are given 3 days cold soak on the skins at 10°C which gives this wine its fruity and spicy characteristics. Fermentation is carried out for 20 days at a maximum temperature of 28°C. Tasting Notes This Shiraz has a beautiful dark purple colour with blackberry and black currant aromas and notes of spice. A mixture of fruit and black pepper on the palate, soft and well balanced wine with a long fruity aftertaste. 30% of this wine is aged in American oak barrels for six months before it is blended back with the rest of the wine. Food Pairing Recommended with spicy dishes, stakes, sausages, grills and seasoned cheese. Serving temperature: 18-20˚C

    ORIGIN Fetească Albă (or White Maiden in English) is the most widely planted white grape in Romania and regarded by many winemakers in Romania as the white indigenous grape with the most potential. Usually off dry it is capable of producing dessert wines of exceptional quality. Intensely aromatic (think Gewurztraminer) Fetească Albă is a highly perfumed wine with hints of stone peaches, apricots and a floral bouquet. The variety dates back to the 1930’s from Transylvania but now flourishes across Romania. WINE MAKING PROCESS Harvesting is done manually at the beginning of September from a vineyard at the base of the slope with exhibition south-west. Vinified in stainless steel tanks with controlled temperature at 16°C, with subsequent maturation on lees. WINEMAKER: When Count Guy de Poix established SERVE in 1994 he was already familiar with the art of wine making, as Guy produces one of the finest wines in Corsica – Domaine Peraldi. Surrounded by an enthusiastic team, Dealu Mare is proving a sound choice for creating quality wines for Legendary Dracula. TASTING Clear, bright, green-yellow with fresh aromas of citrus and plum tree flowers, floral notes. Dry, medium-bodied, fresh and crispy, with pomelo and slightly unripe apricot notes, well-balanced medium length finish. One may serve it as an aperitif or with white meat dishes (fish, chicken) or other “light” summer dishes, such as pasta, salads or fresh cheeses. Best served at 12-13˚C.

    ORIGIN Fetească Neagră (or Black Maiden in English) is an old native variety that originates from Moldova and Muntenia and again is capable of producing some great wines of deep colour although the vine needs constant care. The later the grapes are picked the better the results and a constant trimming programme to arrest the vigour produce excellent results. Fetească Neagră is a bramble fruited red with hints of soft cherry. It can vary greatly depending on terroir and oak influence, some can be earthy while others can boast flavours of cappuccino and vanilla. WINE MAKING PROCESS The harvesting is done by hand, and at the same time a quality selection of grapes is being made. The maceration and the alcoholic fermentation take place in temperature controlled  stainless steel tanks. It is still here that malolactic fermentation and maturation take place. Once the maturation period is complete, the wine is bottled. TASTING Clear, bright, ruby red color, with violet and purple hues and fresh aromas of sour cherries, forest fruits and spices. Dry, well-balanced texture and acidity, pleasant astringency, rich tannins and intense finish. It is recommended to be served at 16˚C, along with red meat, small game, traditional Romanian red meat-based dishes, fresh cheeses.

    ORIGIN Negru de Drăgăşani, is a unique and native grape variety and was created as a cross between Negru Vârtos and arguably Saperavi or Băbească Neagră (local grapes). The grapes are medium size,chilindrical shape. The oenologic potential of this variety is expressed through high capacity of bio-synthetisation and accumulation in grapes of glucides and anthocyans, of maintain proper total contents of acidity, even in advanced phases of super-maturity. The wines presents a very balanced composition, are rich colored, without annoying nuances, extractive and very agreeable to consumption, even when are very young. WINE MAKING PROCESS Manual harvesting in plastic crates, de-stemming and crushing, the must is pumped into temperature-controlled stainless steel tanks where it is seeded with yeasts to complete the alcoholic fermentation, followed by the racking of the wine and the completion of the malolactic fermentation in French oak barrels, where it is refined by a maturing period of about 6 months. TASTING Clear, bright, intense ruby red with violet hues and an intense aromas of black cherries and forest fruit with hints of spices. Dry, full-bodied, strong and balanced, with round tannins, fruity notes and a persistent finish. It is recommended to be served at 15˚C, along with red meat, small game, traditional Romanian red meat-based dishes, fresh cheeses.

Vinified in stainless steel tanks with controlled temperature at 16°C, with subsequent maturation on lees. WINEMAKER: This wine is produced by a famous Romania winemaker Aurelia Visinescu, known for her wines witch reflects the character of the wine variety with strong influence of the terroir. Her enthusiasm for winemaking knowledge and the story behind every harvest turned into passion which Aurelia has been nourishing for more than 20 years. Her native curiosity, the will to know and the experience achieved in time brought Aurelia international recognition.The wines bearing Aurelia Visinescu signature are special wines, with personality; they are made with care, dedication and artistry. TASTING Fresh, full of concentrated flavors from fresh hay, citrus, gooseberry to tropical fruits and vine flowers. The abundant bouquet is well integrated by the mineral hints and the crisp lively acidity. Chilled at 6 – 8 º C, it is an excellent choice for salads, Asian food, fish and seafood, poultry or even on its own.

    ORIGINTămâioasă Românească, described by Jancis Robinson as the ‘frankincense grape’ due to its aroma, is one of the ancient varieties of Romania. Romanians love the versatility of the grape, it can be fermented dry which produces amazing results or up to and over 150g/l of residual sugar. A version of Muscat Blanc a petits grains, the variety naturally sweet does exceptionally well in the Dealu Mare region with its stony soils. One to watch! WINE MAKING PROCESS The grapes are destemmed and slightly crushed, followed by 6 – 8 hours of skin contact in the closed press at 8˚C. Alcoholic fermentation occurs in stainless steel during a period of 14 days at controlled temperature of about 13-14°C. TASTINGPale yellow, with delicious notes of exotic fruits (pineapple, pomelo). Dry, the flavors of ripe papaya are intense, well supported by robust structure and balanced acidity giving the wine amplitude and length. It is recommended to be served at 10-12˚C. One may serve it as an aperitif or with salads, seafood, grilled white fish.

    TASTING NOTES:

    Cabernet-Sauvignon de Purcari is a red wine with attitude: vigorous,  virile, and robust.

    An intense ruby color flecked purple with a rich aroma, dominated by black cherry, complemented by fine notes of exotic spices. The taste is full, complex, with notes of ripe fruit, chocolate, vanilla and raisins. Soft tannins emphasize the roundness and softness of aftertaste with shades of ripening.

    VINIFICATION

    Made from grapes harvested and selected by hand, produced by the traditional method. Aged for 12 months in French oak barrique.

    FOOD PAIRING

    Veined cheese, beef tenderloin with gorgonzola sauce. To enjoy the wine’s fruity notes, it is not recommended with chocolate.
