    Vinification Due to the climate and to the winemaker`s care, this wine has acquired unique qualities. The must was obtained from grapes picked at the end of the harvest, by gravitational method (no compression) and then fermented for a period of over 15 days in the traditional way. After winemaking process, the wine was refined in oak barrels for 12 months, followed by aging in bottle to perfect the typical varietal bouquet. Tasting Notes Deep red in color with ripe black cherry and blackberry flavours with fine oak notes. The flavor is reminiscent of blackcurrant and blackberry along with natural tannins from wine and oak barrels creates a long and fruity aftertaste. This wine was aged in American oak barrels for one year which has perfect quality of this wine. Has a high potential for aging in bottle. Food Pairing Dishes based on beef, marinated wild game accompanied by bitter-sweet sauces, slightly aromatic. Serving temperature: 18-20˚C

    Vinification The best parcels were selected to pick these varieties from. Fermentation took place at 26-28* C, for 25 to 30 days in order to extract the tannins and aromas from grape skins. The aging took one year in American oak and afterwards best barrels were selected in order to give this perfect balanced cuvee. Tasting Notes Dark red in colour with aromas of black cherries. A well balanced wine with taste of plums with soft and delicate tannins giving its velvety aftertaste. Food Pairing May be associated with spicy dishes: stakes, grills and matured cheese. Serving Temperature: 18-20˚C.

    Vinification The vineyards where this Sauvignon Blanc comes from is situated on the very top of the hills at 400 m above sea level on a north facing vineyard. Here it is slightly cooler than any other part of our vineyards and with soils of sand and limestone which gives this wine some mineralogy. The Sauvignon Blanc grapes are handled very carefully during picking and sorting. Every care is taken to limit the exposure to oxygen during the pressing of the grapes. Only the free run is used to make this wine. Grape must is cooled and allowed to settle for 24 to 48 hours before racking off the sediments. After racking off the sediments, we inoculate with a yeast that will ferment at cold temperatures and will give us good herbaceous characteristics. The wine is fermented at 10 to 14°C, the fermentation takes up to 4 weeks to complete. After fermentation the wine is left on the yeast lees for one month before we start to do the batonnage (mixing the yeast lees) which gives the wine more structure. Tasting Notes Yellow-green color with tropical fruit flavor, guava and passion fruit. It is a well balanced wine with fine acidity, felt pleasant in the mouth palace. Fresh and balanced, with a fruity character standing out on the aftertaste, which makes this wine an ideal company for dishes or a good appetizer. Food Pairing Chicken, seafood, cheese and pasta dishes. Serving temperature 10 -12ºC.

    Vinification In order to reach the maximum potential of aromas, the skin contact is longer for this wine. Afterwards the grapes are pressed slowly, carefully, so to preserve all aromas and flavours. The wine is fermented at low temperatures of 10 to 13°C to maintain intense fruit aromas and a nice freshness. Tasting Notes Pale straw in colour with strong herbaceous aromas and just a hint of fennel. Good balance between acidity and body give this wine its long aftertaste. Food Pairing Chicken, seafood, fish and pasta dishes. Serving temperature: 10-12˚C

    The bright golden color harbors an invigorating aroma, citrus-rich, with grapefruit and lime accents, complemented by exotic fruit notes and subtle floral hues. Fresh taste, well defined, fruity and with a well-balanced acidity.

    VINIFICATION

    Made from grapes harvested and selected by hand, produced using traditional methods. Aged for 6 months in French oak barrique
